Caramelized almonds. This delicacy, invented by the chef and official taster to the Marshal Duke of Praslin in 1636, who had the idea to roast almonds in caramelized sugar, was adored by the court of Louis XIII. The recipe for the preparation of Praslines has been a closely-guarded secret ever since. The praslines are made still made according to the original recipe. They are proposed into elegant tin boxes with the coat of arms of the House.
